I'd say about 20 years ago, my Aunt Pat made a dish for a family meal. She called it "Pineapple Cheese Casserole". Now I love pineapples (of course!) and I love cheese...but the two together just don't sound good. I hesitated to try it, but to my surprise....it was fabulous! Did I mention that it has Ritz crackers and butter on the top of it? Anything with those two things on top has to be delish!
So, I got the recipe from Aunt Pat and have been making it ever since. My favorite thing is to see people's noses crinkle up when you tell them what's under the layer of the delish topping and then see them try it. They always love it! They usually look puzzled and try to figure out why they actually like the concoction!
When friends wanted the recipe, I started handing it out titled "Pineapple Cheese Casserole". It didn't take me long to change the name to "Cheryl's Famous Pineapple Cheese Casserole". It sounds much better that way, don't you think?
Anyhoo, I wanted to share the recipe with you so you can crinkle your nose and then hopefully make it to share with your loved ones maybe on New Year's Day.
Cheryl's Famous Pineapple Cheese Casserole
- 2 cans chunk pineapple, drained
- 8oz sharp cheddar cheese, shredded
- Ritz crackers, I usually use 1 1/2 stacks
- 1 stick of butter, melted
- 1 cup sugar
- 6 T flour
- (Hint, preshredded store bought cheese doesn't work. It doesn't melt properly)
Mix sugar and flour together. Add cheese and pineapple. Put in 9 inch baking dish. Crumble crackers on top and pour butter (yum!) over the top. Bake at 350 degrees for 30 minutes.
By the way...feel free to change the name of the recipe to "(your names)'s Famous Pineapple Cheese Casserole! I know a few people who already have...in fact one friend served it to me as her famous recipe and forgot that it had originated with me (technically). It was funny, my mother was there and we didn't mention the fact that my friend actually got it from me, we just enjoyed it and complimented her!
