I think I gained a pound looking at this! Yummm... Hey everyone! My family and I just got back from vacationing in the Exumas in the Bahamas. It's always so nice to spend quality time together. We laughed, ate, reminisced, fished, ate, relaxed, ate some more and just sat on the beach in the sun. It was a great time for all, my cheeks kept hurting from laughing, but I have to admit...I did miss The Posh Pineapple and the Poshettes!

Ice Cream Lasagna recipe

Memorial Day weekend is here and it always gives us time to remember those who have served and how lucky we are to be Americans. I am very thankful for both of these. The holiday weekend also gives us time to relax and hang out with family and friends. Cook outs, beach and pool parties and red, white and blue fill the days. I want to share one of my family's favorite hot weather dessert recipes with you. Kids love it, adults love it (just as much if not more) and I love it because it's super easy. Bonus...it's cool and can be made a day ahead! Yay!

Although I got this recipe and it was titled "Sue's Fabulous Ice Cream Lasagna", it quickly became "Cheryl's Fabulous Ice Cream Lasagna"! (My friend Sue doesn't mind, she changes the names of the recipes I give her to include her name. It's an understood part of our friendship!) So here it is...3 easy steps to yum...

Cheryl's Fabulous Ice Cream Lasagna
1. Gather ingredients

  • 2 boxes of ice cream sandwiches (of course I do the store brand)
  • 2 large tubs of whipped cream
  • Oreo Cookie Crumbs (or store brand!)
  • Chocolate or Caramel Sauce

2. Say "yes" to layers!
Layer ingredients in the above order in a 9 x 13 inch pan. Repeat and freeze! Easy peasy!

3. Add your own personal flare.
For extra fun, you can do strawberry, butterscotch or whatever flavor you want instead of chocolate or caramel. You can also sprinkle the top with your favorite nuts.

Cover dish with aluminum foil and freeze until set, at least 30 minutes. Get out the spatula...you're going to need it!!
